What!... a great Mexican restaurant in Central Vermont?... Si, Senor.

The Bare Mexican Restaurant was established in 2006. It's owner Dr. Gary DeMara is of Mexican decent. He was born in Southern California and has lived in Mexico for over 5 years. During that time, he has traveled to Mexico's most remote areas which include the jungles of Chiapas in the southeast to Durango on the west coast, the Sonoran Desert in the north to the borders of Central America. He has also lived in Mexico City, the most populated city in the world. Dr. DeMara has collected recipes that combine innovative techniques and dynamic food combinations with historic methods and ethnic contributions to produce handcrafted dishes as exciting as Mexico itself: the sauces are homemade and traditionally fried, using chilies from the region, which bring out the robust flavors of Mexico; the beans are slow cooked for many hours and then refried in much the same way as it has been done for centuries in Latin America. Dr. DeMara's recipes, techniques, and Latin influence, a compilation of a life-time, is now, for the first time, presented to the people of Vermont at "The Bare Mexican Restaurant" in Randolph, Vermont. Your are cordially invited to visit "Con Mucho Gusto."

The Bare Mexican Restaurant is located on Main Street in downtown Randolph , Vermont and can be identified by an array of flags which fly outside signaling that the restaurant is open for business. Hanging baskets filled with spring and summer flowers and chili pepper bladed fans whirling to festive outdoor Latin music is another clue that you have arrived. (Photograph top right)

When you enter the restaurant, you will be instantly surprised by the vibrant colors. The charming furnishings and the quaint cozy atmosphere of the dinning room give you the feel of a refreshing visit to Mexico. (center photograph right) If you listen carefully, over the sound of soft Latin music, you will hear the trickle of the garden fountain which is situated in front of a mural overlooking what you can imagine to be "Bahia de Banderia" or Banderas Bay in beautiful Puerto Vallarta.

If you like it "hot" and "spicy," you are invited to experience our "wall of fire." (bottom, right). It generally has between 18 and 24 different "designer" hot sauces. The sauces are replaced, as they are used up, with a variety of designer products from mild to pure capsaicin resin. Walk up and choose your favorite!

The photograph on the left, is our signature salad: "Insalada Vallarta." The shape of the flour bowl reminds one of a beautiful shell filled with fresh garden greens. The greens are sprinkled with julienne carrots and black olives then topped with queso blanco, grilled chicken or shrimp, slices of avocado and a side one of our homemade dressings: Avocado, Ranchero or creamy Caesar. The salad is garnished with slices of tomatoes and cucumbers.
